Mr. Maa Keang Seng was born in 1969 at Perak. He first stepped into the F&B industry in 1991 (when he was 22 years old). He acquired all the skills about making chicken rice in Singapore and mastered it within a week. After working in Singapore for a year, he returned to Malaysia and start his own chicken rice stall in 1992. In 2016, after having more than 25 years of experience in chicken rice, he began operating his very own restaurant in Taman Sri Tebrau with his family.

The first recommended food in his restaurant is “Roasted Chicken”. Before the chicken is roasted, it is first put into the herbal soup base which contains more than 7 ingredients to let the chickens absorb all the flavour of the soup base. After that, the chicken is then taken out and rest for 15 minutes. Finally the chicken is finally roasted for at least 10 minutes and it is ready to be served. This chicken, when eaten, brings out juicy, smooth and wet (not too dry) texture and the taste has a strong herbal taste and less savoury.

The second recommended food in “Keang Seng” is its “Boiled White Chicken”. All the chicken is carefully selected by the owner, and the weight of each chicken ranged from 1.80kg to 2.00kg. The owner also mentioned that at least 20 chickens will be boiled together for at least 45 minutes and it will taste more delicious. The meat tastes sweet and salty and the texture of the meat is smooth and soft.

Besides that, the owner also recommended his homemade chilies sauce. Basically the ingredients such as garlic, ginger and small chilies are all taken to be blended until the mixture becomes fine paste. It takes around one hour for the chilies sauce to be presentable.

The fourth recommended is the “Thai Style Chicken Feet”. The chicken feet are first de-skined before being boiled until it is cooked and are finally washed. To make the chicken feet more flavour and tasty, they are mixed with Thai sweet sauce, chilies, lime, garlic and vinegar. The sweet and sour chicken feet have been one of the regulars’ favourite.

Last but not least, the owner also recommended his “Chicken Intestine”. By using the same method, the intestines are cleaned for 15 minutes, boiled and finally rinsed into the clean water for some time. The chicken intestines are available in Thai sauce or soy sauce depending on the customer preference. The texture of the chicken intestines is soft and chewy.
