THE BEST X.O. FISH HEAD NOODLES BY SPECIALIST “SOON LEI” @ KUCHAI LAMA

One of the locals favourite eatery “Fish Head Noodles”, which served on respective recipe by restaurants that like by their regulars. While “X.O. Fish Head Noodles” that began to be served in the market since 90s, recently become one of our nation’s delicacy eatery wanted by the visitors. Here in Kuchai Lama, we have found and being successfully recognised the best X.O. Fish Head Noodle house “Soon Lei” running by the Pua family into 2nd generation.

The local originated Mr. Pua Tian Lew (born 1960), together with his lovely wife Ms. Lee Chooi Foong (born 1967) both were the initial founders and owners of the best recognised “Soon Lei Restaurant” X.O. Fish Head Noodles at Taman Kuchai Jaya presenting their home recipe fish head noodles and other signature menus to the public under a roof. Also currently being joined & assisted by their sons Pua Kok Yong (born 1984) and Pua Kok Chong (born 1986) as second generation.

Mr. Pua Tian Lew, also known Ah Soon who at his age of 58 recently, initially stepped into the f&b industry since his 22nd in year 1982 began as a kitchen trainee under-employed in a chinese cuisine restaurant at Ampang Park spent about 6 years exposed in the career. Later-on running his very first own seafood cuisine food stall in year 1988 at his 28th of age, also trying to serve his homemade fish head noodles there, stayed more than 15 years.

In order to further his exposure in f&b industry, also with foreseen the fish head noodle’s market opportunity in the field made Ah Soon decided to establish his very owned fish head noodle house, named “Soon Lei Restaurant” together with wife Ah Foong at Kuchai Lama, Kuala Lumpur in year 2004. Started to introduce their home recipe fish head noodles and other Ah Soon’s signature menus to the locals. Then introducing their very homemade “X.O. Fish Head Noodles” after 5 years in 2009, having great response from the market.

In this Soon Lei noodle house, their founder’s secret recipe “X.O. Fish Head Noodle” in soup surely will be the first top recommended among menus. Soup base boiled 4-5 hours with mixture of fish bones, served with rough mee hoon (rice noodles) & their home recipe flour-up deep fried or fresh Catfish head, and sided with salted veges, yam, white-water fresh beancurd etc then finally served with fresh milk & slight rice wine poured into brings the best X.O. Fish Head Noodle you must try when reached Kuchai Lama. Especially the soup freshness taste into mouth and the fish head freshness & meat’s texture in bites.

Secondly will be their “Taiwanese Pumpkin Mee Hoon”, which is the first in town according to the owners. Selected rice noodles (mee hoon) dry-fried with deep-fried cutted pumpkin shredded/cubes, mixed into dried shrimp, salted egg yolk, dried cuttlefish, fresh prawn and minced pork brings a plate of exotic salty & tasty dry-fried mee hoon you will never found better in town.

Another will be their “Claypot Lo Shi Fun”, also one of their restaurant’s signature favourite by the visitors. Rice-made short noodles (lo shi fun) fried with chicken egg, veges and onions shredded, then minutes boiled in claypot and finally served topped with a raw chicken egg sided with their home recipe marinated minced pork really brings the best tasty Claypot Lo Shi Fun you cannot aside.

Beside noodles corner, their “Homemade Fried Yam Abacus” will be among the best Hakka traditional menu can be found in this restaurant. Yam balls handmade in-house  after steamed, watering and boil-cooked, then fried with marinated minced pork, mushroom shredded, black fungus shredded, veges, dried shrimp and spring onions brings a complete plate of tasty Hakka Yam Abacus you will never regret after tasted.

Nonetheless, the owners also taken the opportunity to introduce their very favourite “Mantis Shrimp with Salted Egg”. Fresh selected mantis shrimp meats prepared in deep fried with their recipe flour-up, then fried mixed with butter, fresh milk & salted egg yolk paste bring the best tri-taste & bite’s crispy you cannot missed when stepped into this X.O.
